Cloves Whole – 20g
Cloves add a great spiciness to beer styles. The darker/heavier the beer, the more cloves can be used. Great for winter ales. Be careful to avoid an overpowering taste, rather under spice than over. Making a tincture (using vodka as a base) is a great way to control the addition.
Can be added to the boil 5 to 10 minutes before the end. Can also be added to the secondary fermenter. To ensure sanitation, soak in vodka for half an hour before use (as little vodka as possible) and add everything to the fermenter. Alternatively, if you’re worried about the effect of the vodka, lightly boil it for a few minutes, before adding it. Making a tincture works great (let stand in vodka for a few weeks, and use the resulting infused vodka to flavour.
